Apple brandy had a tough time. It was considered a symbol of cheap spirits, mainly due to the ubiquitous apples that used to cost almost nothing. When someone showed up at a tasting with apple brandy, they would automatically be asked, "Oh, did your plums freeze, huh?".
Well-distilled apple brandy, commonly (and incorrectly) referred to as calvados in the Czech Republic, is actually a very good spirit with a characteristic aroma and an exceptionally smooth taste.
So, in 2017, we finally got moving. The timing was really great. That year, the apple harvest in the Czech Republic was the weakest in the last decade. The price per kilo was much higher than that of bananas or oranges. And it was that feeling of distilling properly valued and expensive fruit that made the decision :)
Because why venture into cider when you can have something stronger from apples. Right?
