In 2018, we launched our first apple brandy from the 2017 vintage, a distillate made from crushed apples. However, we pressed half of the apples (extracted the juice), fermented it, distilled it, and aged it in oak barrels for nearly two years. The result is a classic calvados as described in textbooks. However, we cannot name it that. The designation Calvados can only be used for apple brandy from the French part of Normandy, just like Champagne.
You therefore have the opportunity to taste an apple distillate made in two ways: clear from whole apples and aged from apple juice.
The aged version was additionally stored for 18 months in white oak barrels. From them, it gained its color, smoothness, sweetness, and a light vanilla note.
