Galician Artisanal Chicharrones: The Pressed Flavor of Tradition
Dive into the traditional flavor of Galicia with our Artisanal Chicharrones. Known locally as roxóns, rinchóns, or rixóns, this product is an emblem of the traditional slaughter, where the goal is to make use of every part of the Galician pig, selected for its superior quality.
We make our chicharrones by slowly cooking the skin and meat of Galician pork in its own fat. This prolonged cooking ensures that the meat remains tender and juicy. Subsequently, the mass is pressed to compact the pieces, resulting in that characteristic shape and soft and easy-to-cut texture that distinguishes them from fried cracklings.
Our recipe remains faithful to tradition: we only use salt to enhance the natural flavor of the meat, without additives, preservatives, or colorants. By choosing our chicharrones, you not only enjoy a unique flavor but also support local livestock farming and a rich, sustainable gastronomy.
🥩 Quality Guarantee: Slow Cooking and Authentic Product
The authenticity of our roxóns is based on:
- Galician Raw Material: Exclusively skins and meat selected from Galician pigs.
- Artisanal Process: Slowly cooked in their own fat until reaching the ideal tenderness, and then manually pressed.
- Pure Flavor: The simple recipe (meat, skin, and salt) guarantees an intense and natural flavor, without interference from spices or smokiness, concentrating the essence of quality pork.
🧑🍳 Cooking Tips: Beyond the Appetizer
Galician chicharrones are incredibly versatile and enjoyed in multiple ways:
- Appetizer and Tapas: They can be consumed cold as is, sliced into thick pieces or chunks, accompanied by good Galician bread. If you prefer a juicier bite, lightly heat them in a pan before serving.
- Filling for Empanadas: They are the fundamental ingredient of the Roxóns Empanada. Simply sauté the chopped chicharrones with onion and pepper for an unforgettable traditional filling.
- Traditional Pastry: Use them in the classic Chicharrones Cake or Bica (Bica de Roxóns), a traditional Galician recipe that mixes flour, sugar, and crumbled chicharrones, creating a delicious sweet-salty contrast.
📦 Storage and Shipping
- Presentation: Cooked and pressed product, ready for consumption. It is shipped vacuum packed.
- Storage: Once received, keep the chicharrones in a cool and dry place (a pantry) or in the refrigerator (where they will maintain their compact shape).
- Shelf Life: Once the package is opened, it is recommended to store the leftovers in a closed container in the fridge and consume within 15 days. They can also be frozen, although it is better to give them a heat boost in a pan after thawing to recover some of their texture.
