Made from pasteurized cow's milk, it has a tall cylindrical shape, a fine light gray crust with a slight blue tint, and an ivory paste with blue cavities. Its soft and melting texture is accompanied by sweet, milky aromas, slightly nutty notes, and a subtle hint of mushroom. Its aging, which generally lasts 50 days, gives it aromatic depth while maintaining a beautiful delicacy, making this blue cheese accessible even to the most sensitive palates.
