The AOP Greek feta is an iconic cheese from Greece. It is exclusively produced from sheep's milk, sometimes supplemented with goat's milk (maximum 30%), in specific regions of the country. Its production follows an ancestral know-how. The milk is curdled, drained, cut into blocks, and then aged in brine for at least two months. This process gives it its crumbly texture, bright white color, and characteristic salty and tangy flavor. Feta is a key ingredient in Mediterranean cuisine, particularly in Greek salad, pastries (spanakopita), or simply drizzled with olive oil and oregano.
