Lardu Grillade is a homemade cheese specialty that combines the rusticity of local goat cheese (called "le Bourguignon") with the generosity of artisanal smoked bacon from Maison Javaux. A slice of semi-dry cheese is seasoned with herbs from Provence and then wrapped in two beautiful slices of smoked belly. This assembly is designed to be grilled in a hot pan without adding any fat, or baked in the oven on a slice of rustic bread with a drizzle of olive oil. During cooking, the bacon becomes crispy, the cheese melts gently, and the herbs release their aromas.
