The Pithiviers with hay is an artisanal cheese produced in the vicinity of Pithiviers, in the Loiret. Made by Fromagerie Jacquin. Its bloomy rind is covered with hay, a traditional aging method that allows the cheese to dry and prolongs its preservation. This process gives the cheese a delicate aroma, both fruity and herbal. Its paste, cream-white in color, is melting under the rind and slightly chalky in its heart. On the palate, it offers a mild milk flavor, enhanced by the vegetal notes of the hay. It pairs perfectly with a dry white wine such as Quincy or Sancerre.
