- Water Change: It is crucial to change the water at least every 12 hours for the desalting process to be effective.
- Cooking: Once desalting is done, cook in clean and abundant water. The cooking time is approximately 1 hour on low heat.
- Galician Lacon: Serve the cooked lacon sliced, accompanied by boiled potatoes (cachelos), a drizzle of extra virgin olive oil, and paprika (sweet or spicy).
