This tomme is aged in our cellars in the heart of the Janin house in Champagnole. Regularly rubbed with Yellow Wine, it develops a fragrant rind and a soft paste with typical Jura aromas: fresh nuts, mild spices, dried fruits, and a slight oxidative touch. The raw cow's milk gives it a creamy texture and a beautiful aromatic depth. This cheese reflects the richness of the Jura terroir. It pairs ideally with a Yellow Wine from Jura, of course, but also with a Savagnin or a Côtes du Jura aged under veil, which extend its aromatic notes and enhance its character. To be enjoyed at the end of a meal or with a country sourdough bread for a gourmet and local experience.
