The Carán Red Wine is a Limited Edition of 6000 bottles. Selection of high-quality estates. Manual and staggered harvesting of the different varieties at their optimal ripeness. Wine NOT filtered.

In 2017, the most destructive frost in decades occurred, resulting in a reduced but miraculously excellent harvest. In 2020, the Carán wine was launched on the market during the most destructive pandemic in years. Our Carán wine is from the 2017 vintage, and our project was born in 2020. With this background, we believe that friendship, unity, and perseverance are key to overcoming any adversity.

Variety: Blend of 5 varieties where the majority is Tempranillo with small percentages of Graciano, Garnacha, Maturana tinta, and other reds (Mertot).

Production:
Crushing of destemmed grapes without pressing in intelligent tanks "Ganimedes". Cold pre-fermentation maceration for 3 days.
Fermentation of the grapes at a controlled temperature of 22-24°C with the natural yeasts from the different vineyards.
Malolactic fermentation in barrels, followed by aging for 16 months in 50% French oak and 50% American oak barrels of different years.
Natural stabilization of the wine during its long aging in barrels.
Clarification with egg white.
Wine NOT filtered.

Tasting:
With a clean and bright appearance, intense cherry red color with garnet edges, aromas of ripe red fruit, sour cherries, currants, licorice, black fruit with plums, lactic notes, and cocoa over a background of eucalyptus and violets.
On the palate, it is smooth, meaty, and has good freshness. Lively but polished tannins. Round, with a great retro-nasal finish of ripe fruit and cocoa. Long and persistent.

Pairing:
Serving temperature: 14-16ºC.
Pairs well with all types of dishes from the simplest to the most complex.
