This Italian Veal Roast is a so-called rolled roast; our butchers pre-cut and roll the veal loin or shoulder, which is cut in half beforehand. The veal is rolled around a stuffing inspired by Italian flavors, featuring sun-dried tomatoes, basil, and feta to add a delicious taste to the preparation. The roast is then wrapped with a layer of pork to hold it together. This preparation provides an amazing taste and texture for a veal roast. The sweetness and acidity of the ingredients blend wonderfully with this meat, which is generous in flavor and delicate. Each veal roast is prepared by our butchers by hand, using veal from Corrèze. Butcher's tip: Roast your Italian veal roast at 180 °C for about 45 minutes per kilo. Baste it often to preserve its tenderness, then let it rest for 10 minutes before serving to enhance the flavors of the veal and the Italian garnishes.
