The pork paupiettes are made from pork meat sourced directly from the Roussaly slaughterhouse in Lacaune in the Tarn and from its breeders of the A.P.O (Association Porci d'Oc). Our pork paupiette recipe is comfortingly simple, with local meat surrounding a homemade stuffing filled with a mixture of sausage meat, accompanied by salt, pepper, and a mix of spices. After sautéing onions and mushrooms in a pan, incorporate them before adding a splash of fresh cream. Then let it rest in an oven at 210 °C for about 10 to 15 minutes.
