Originating from the Atlantic seas, the ray, after being caught and gutted, is salted and dried. Due to these curing and drying processes, this product acquires unique organoleptic characteristics. It has white flesh, a characteristic smell and taste with a predominance of salt and a taste of the sea, and a firm, juicy, filamentous texture.
