Production
The high quality of this extra virgin olive oil is ensured by harvesting healthy, unripe fruits at the optimal moment of ripeness. Each variety is harvested separately, with special care, to preserve its specificity before creating the final blend.
The olives are mechanically processed within 12 hours of harvesting, at a temperature below 27°C. Cold extraction allows for the preservation of natural compounds, freshness, and stability, resulting in extra virgin olive oil with a clear structure and pure aroma.
Only after processing does the blending process begin, in which the varieties are carefully combined to achieve the recognizable profile of Valade oil.
