It is a light fruity extra virgin olive oil, golden yellow in color with olive green reflections. The aroma of the cultivar is distinctly perceived, with herbaceous and floral notes. On tasting, the flavor is delicate fruity, with hints of fresh almond, tomato, and apple. Excellent as a raw condiment on dishes of raw fish, roasted or steamed dishes, shellfish, carpaccio, and boiled vegetables.
