The fresh pork belly offered by Maison Lascours comes from Tarnais pigs. We work with local breeders from the A.P.O (Alliance Porci d'Oc) linked to the Roussaly Lacaune cutting workshop. Choosing Tarnais pigs for our pork belly and other pork cuts allows us to guarantee you pork meat of increasingly higher quality. The lean bacon is also used to prepare ventrèche, lardons, and notably the famous British bacon. Fresh pork belly is also used for charcuterie preparations such as sausages, salamis, and others. Pork belly is a choice cut, and there are as many different pork belly recipes as there are varieties of ventrèches. You can enjoy smoked pork belly, pan-fried, or accompanied by barbecue marinade, a delight! Butcher's tip: For a flavorful and tender pork belly, prefer slow cooking which will allow the fat to diffuse and tenderize the meat. In the oven, bake it at 160 °C for 1.5 to 2 hours, then finish with a few minutes at high temperature to achieve a crispy skin. On the barbecue, opt for indirect cooking before briefly grilling it over the coals for a delicious and fragrant result.
