The Bouyguette du Ségala is a French artisanal cheese with a creamy texture, made from raw goat's milk. It is produced in the Tarn department, located in the Midi-Pyrénées region. This cheese is appreciated for its creamy texture and its milky and slightly goat-like aromas. The production of Bouyguette du Ségala begins with the collection of raw goat's milk, which is then slowly coagulated using lactic fermentation. The curd is then hand-molded into linen squares, giving each cheese its distinctive elongated shape, marked by the folds of the fabric. The cheeses are left to drain for at least 24 hours before being transferred to aging rooms. Each cheese is decorated with a sprig of rosemary on top. The Bouyguette can be consumed young, when the inside is semi-soft and slightly chalky, and the flavor is relatively mild with delicate hints of rosemary and thyme.
