- Characterful Smoking: After being stuffed into natural casing, the Androlla undergoes a curing process and, traditionally, a natural smoking with oak wood that gives it its unmistakable aroma.

- Boiled or Stew: The classic way is boiled. Place the whole androlla in a pot with plenty of cold water. Once it starts to boil, lower the heat and simmer for about 90 minutes (one and a half hours).
- The Classic Dish: It is served in slices or pieces, traditionally accompanied by grelos (or Galician turnip tops) and cachelos (potatoes boiled in the same broth).
- Rice with Androlla: Chopped, it is a delicious ingredient to flavor a soupy rice or paella-style dish, lightly sautéing it before adding the rice.
