This artisanal cheese, with Manchego Designation of Origin, is made from raw Manchega sheep's milk. Its natural rind is formed from the cheese paste itself. Thanks to the personalized treatment, which involves each cheese passing through the artisan's hands at least ten times, and its minimum aging period of nine months, production is limited, making it a gourmet cheese.
