Beaufort is a French artisanal AOP cheese made from cooked pressed curd, produced from raw cow's milk. It is made in the valleys of Beaufortain, Tarentaise, Maurienne, and Val d'Arly in Savoie. This cheese is aged for at least six months and is appreciated for its dense and smooth texture, as well as its fruity and floral aromas.
