Our pork rack comes from pigs raised in Tarn, in partnership with Roussaly Lacaune and the breeders of the Alliance Porci d’Oc (A.P.O), ensuring quality meat and controlled traceability. It is a pork loin preserved with its ribs, forming a structured and generous piece. This cut highlights the loin, located along the back of the pig, and is distinguished by the presence of the bone, unlike the pork loin roast which is boneless. In rack form, the pork loin reveals all its finesse: a flavorful meat, tender when cooked, and particularly elegant to serve. It is an ideal piece for oven cooking, accompanied by seasonal vegetables, appealing both for its taste and its presentation at the table. Butcher's tip: To successfully cook your piece, first sear it quickly over high heat to color the meat, then finish cooking in the oven at 160–170 °C. Baste regularly with the cooking juices, then let it rest for 10 minutes under aluminum foil before slicing for tender meat and perfectly concentrated flavors.
