Obtained from the whole piece of pork belly, subjected to a curing process in controlled humidity and temperature chambers followed by smoking at low temperatures.
2. INGREDIENTS / ALLERGENS
Pork (Origin: EU) (90%), water, salt, paprika paste, garlic, preservatives: (sodium nitrite and potassium nitrate) and antioxidants: (ascorbic acid, sodium ascorbate, sodium citrate). Stuffed in natural casing. Smoked with oak wood.
3. SENSORY CHARACTERISTICS
ACCEPTANCE LIMIT PARAMETERS
Color - With a red spiral phase (“snail”) related to the pork belly (muscle).
Smell - Pleasant, mild, and slightly smoky.
Taste - Pleasant and mild. With an intense and smoky flavor.
Texture - Slightly fibrous and reasonably soft.
