Granbù is an aged buffalo cheese made from raw milk, with a cylindrical shape and a weight of 6-7 kg. Its hard and cooked paste is compact, with a small, widespread eye that tends to crumble over time. The dry, striped rind, with a straw-yellow color, protects a heart with a fresh aroma, initially with hints of fresh butter, which evolve into more intense flavors with aging. The taste is full and decisive, with a perfect balance of sweetness and saltiness. The minimum aging period is 8 months (240 days), a process that ensures aromatic complexity and a unique structure.
