The volandeira is a Galician shellfish that is often confused with the zamburiña, as they are very similar in both quality and shape. The color of the volandeira shell is more reddish and orange compared to the dark tones of the zamburiña.
Another difference is found in its shell, which is much rounder compared to the zamburiña; moreover, the latter has a single “ear” instead of the Galician volandeira which has 2.
The volandeira is the only shellfish that is caught using trawling methods by boats from the Cambados fish market, as they are buried alongside scallops in muddy bottoms and can only be extracted this way.
The Galician volandeira can be found fresh during certain months of the year when the toxin level is zero; for the rest of the year, it can be found eviscerated and frozen.
In each kilo of Galician volandeira, there are 25-35 pieces.
