The Black Galician Scallop is known by this name due to its dark coloration on the inside. It is undoubtedly one of the most flavorful Galician seafood but also one of the rarest that we can find in the family of pectinids.
It differs from the volandeira mainly in its shell; the black scallop has a darker, narrower shell and only has one ear, which it uses to adhere to any surface.
In terms of flavor, the Black Galician Scallop has a finer taste and more of a sea flavor than its namesake, the volandeira, where the color of the coral is the same as its flesh, while the volandeira is completely red or orange.
The Galician Scallop that we present at Mariscos O Grove is alive and 25-35 units fit in a kilogram.
It is estimated that 1 kg of Black Galician Scallop is suitable for every 2-3 people.
HOW TO PREPARE BLACK GALICIAN SCALLOP
Since they are alive, the best way to prepare them is in a pan, and for this, we just need to heat a pan with a little oil and then add our Black Galician Scallop. Once they start to open, we will sprinkle a little parsley and chopped garlic on them to enhance the flavor.
