The Galician gooseneck barnacle is one of the most valued seafood items in Spanish cuisine. The barnacle harvesters collect them by hand at low tide, facing the risks involved in working on the rocks battered by the waves of the Galician coast. How to cook Galician gooseneck barnacles
Boil plenty of water with sea salt (50 g/liter). When it reaches a strong boil, add the barnacles and remove them 1 to 2 minutes after the water returns to a boil. Cover them with a damp cloth in their own cooking water until serving to keep them warm and juicy when eating.
Storage
Keep refrigerated covered with a damp cloth. Consume within 48 hours of receiving the order.
