It is very important to mention this as this Galician fish, due to its freshness and quality of the meat, is far superior to the black monkfish caught at sea, as deep-sea boats take several days to return to shore to auction the fish.
Galician Black Monkfish, The Most Valued
There are 3 different types of monkfish: black, pink, and white. To know which one it is, we must look at the inside of its belly, as this Galician fish is exactly the same on the outside.
Of the 3 types, the most valued is undoubtedly the Galician black monkfish; for two main reasons: for its flavor and also because it shrinks the least when cooked, unlike the pink and white varieties, the latter being of the lowest quality as it shrinks a lot.
It is very important to know that the head of the monkfish weighs about 40-50% of the total weight of the Galician black monkfish, so if you buy a 1kg monkfish, the edible part will be 500 grams.
At Mariscos O Grove, we can send you the monkfish in 2 different ways: whole without skin or with the head separated from the tail. Unless you tell us otherwise, we will always send the head as it is ideal for making soups and also contains the tenderest parts of the Galician black monkfish.
