The Maroilles from the Ferme des Bahardes is an AOP farmhouse cheese produced in Étrœungt, in the heart of Thiérache. Made from raw milk from cows raised on-site (Prim's Holstein and Rouge Flamande), it is crafted in accordance with local traditions. Its orange washed rind, developed in a natural cave with red bricks, houses a soft and supple paste, slightly sticky, which reveals powerful aromas of damp cellar, fermented milk, and hazelnut. This characterful cheese evolves with aging, gaining in suppleness and aromatic intensity. The Ferme des Bahardes also offers regional specialties such as Boulette d’Avesnes, Tomme de Thiérache, and flamiches with Maroilles. This cheese embodies the authenticity of the terroir and the artisanal know-how passed down with passion by its producers.
