Comtoise fondue is an emblematic specialty of the Franche-Comté region, prepared with grated Comté AOP, slowly melted with dry white wine from Jura. Everything is melted in a pot rubbed with garlic, until a smooth and creamy texture is achieved. Pieces of bread, steamed potatoes, or even local charcuterie like Morteau sausage are dipped into it. The Comté used can be young or aged up to 24 months, influencing the aromatic strength of the fondue. It is the quintessential communal dish, to be shared around a burner, ideally accompanied by a white Côtes du Jura. More than just a dish, it is a warm and generous tradition, a symbol of the Jura terroir.
