Fresh Galician cockles | Hand-harvested from the shellfish banks of the estuaries. Galician cockles are one of the most beloved mollusks in the cuisine of the Rías Baixas. Hand-harvested by shellfish gatherers in the shellfish banks of the Galician estuaries, they arrive at your table in less than 24 hours, preserving all their sea flavor and characteristic texture. We always send them alive and raw, directly from the Galician fish markets without intermediaries.
How to prepare Galician cockles: Soak them in cold water with sea salt for 30 minutes to expel the sand. Steam them in a covered pot for 2-3 minutes until they open. Discard any that do not open. Serve with a few drops of lemon or with a quick marinade of garlic, oil, and parsley.
Storage: Keep refrigerated covered with a damp cloth. Consume within 24-48 hours after receiving the order.
Origin: Galician estuaries · FAO Zone 27 · Cerastoderma edule
