Galician escupiña | The most exclusive and scarce mollusk from the Galician markets. The escupiña is one of the lesser-known but most appreciated mollusks by connoisseurs of the Galician markets. It resembles the cockle but is significantly larger in size, and its catches are very limited. Its meat is generous, flavorful, and has a pronounced marine taste reminiscent of the fine clam.
How to prepare escupiña: Perfect steamed or in a marinara style like clams. It is also excellent grilled with garlic and olive oil.
Storage: Keep refrigerated covered with a damp cloth. Consume within 24-48 hours after receipt.
Origin: Galician rías · FAO Zone 27 · Glycymeris glycymeris
