How to cook Galician octopus at home: The Galician trick: freeze the octopus 48 hours beforehand to break the muscle fibers. Boil plenty of water with salt and bay leaf. When it boils vigorously, “scare” the octopus three times by dipping it in and taking it out before letting it cook definitively. Cook for 45-50 minutes for a 3.5 kg piece. Poke with a thin skewer in the thickest part to check the doneness: it should go in without resistance. Let it rest for 15 minutes outside the water before cutting.
Storage: Keep refrigerated between 0 and 4°C. Consume within 24 hours. It can also be perfectly frozen for later use.
