The Guérandais farmer's cheese is an artisanal cheese made from raw goat's milk, produced in Allier, in the heart of the Bourbonnais Bocage. It is crafted at the Ferme de Villars by Guillaume and Sévérine Potier, who raise their goats traditionally, feeding them hay, grains, and natural pasture. This cheese is distinguished by its oval shape, its natural rind that is white to light yellow, and its white paste with a creamy, sometimes frothy texture. Its uniqueness lies in the use of Guérande fleur de sel, which gives it a subtle salty touch and a unique character. On the palate, it offers sweet goat aromas, a milky freshness, and a slight vegetal note. As it matures, it gains in character while maintaining its balance. This confidential cheese, awarded a regional gold medal, is a fine example of terroir and French farming know-how.
