Pouligny-Saint-Pierre is a goat cheese from Berry, recognized as the oldest goat cheese AOP in France. Made from raw and whole milk from Alpine and Saanen goats, it is distinguished by its elongated pyramid shape. Its bloomy rind, marbled ivory in color, may develop a bluish fuzz depending on the aging process. Its paste is smooth, melting, and homogeneous.
