The 2018 vintage Parmesan is an exceptional Parmigiano Reggiano AOP, aged for over six years in the traditional cellars of the Luigi Guffanti house. This long aging gives the cheese a very dry and brittle texture, marked by numerous tyrosine crystals that crunch under the bite. On the palate, it reveals a deep and complex aromatic palette: dried fruits, broth, leather, roasted hazelnut, and dry hay, with a salty and persistent finish. This rare parmesan is intended for discerning connoisseurs, to be enjoyed in shavings with an old Italian red wine, a Barolo or an Amarone, or simply as a bite to appreciate its richness. The Guffanti house selects the best wheels from producers in the Po Valley.
