The Epoisses fermier Les Marronniers is an iconic cheese from Burgundy, handcrafted in Origny by the GAEC des Marronniers. Made from raw cow's milk, it is carefully aged by being rubbed with Burgundy pomace, which gives it its characteristic orange rind and powerful aromas. Its soft paste becomes melting under the rind, while the heart can remain slightly crumbly depending on the aging. On the palate, it develops bold flavors of underbrush, fermented fruits, and wine, with a marked intensity that delights cheese lovers. This farmhouse cheese is the last raw milk Epoisses still produced on the farm, perpetuating an ancestral know-how. It is ideally enjoyed between May and November, accompanied by rustic bread and a white wine from Jura or a red Burgundy.
