Aged in the open air in our cathedral drying room in Labastide-du-Haut-Mont, a unique location rising over 750 meters in altitude, the variations in temperature and humidity, as well as the local winds, give it a beautiful length on the palate and delicate woody notes.
Offered in a 450 g piece, vacuum packed to ensure its freshness and preserve its aromas, it is suitable for tasting in thin slices as well as for creating gourmet platters.
