Chaource AOP is a French artisanal soft cheese made from cow's milk. It is produced in the Champagne-Ardenne region, located in the northeast of France. This cheese is appreciated for its creamy texture and rich, buttery aromas. The production of Chaource begins with the collection of cow's milk, which is then coagulated through the action of acidification and rennet. The curd is then cut and transferred into molds to drain. The cheese is aged for about two to four weeks, during which it develops a white, velvety rind.
