The finest cuts from our heavy farm pigs are carefully selected, gently salted with dry salt for a week before being placed in our open-air dryer where they will be forgotten for a few months. It is through the changing seasons and natural variations in temperature and humidity that the flavors will develop and the length on the palate will be born.
