The fresh Aligot cheese is an unaged cheese, derived from the early stages of making Cantal, Salers, or Laguiole. This pressed and fermented curd, which is neither salted nor aged, has an elastic and melting texture ideal for preparing aligot, an emblematic dish of Aubrac. This cheese is not meant to be eaten raw, but melted with potatoes, butter, and cream, to achieve the famous stretchy texture of aligot.
