This sheep's milk tomme is an original creation from the Ferme de la Demoiselle by Caroline Grandclément, nestled in the Jura Mountains. Made from raw sheep's milk from free-range sheep, it is carefully aged on a bed of sweet vernal grass and woodruff, two plants with subtle and enchanting fragrances. Its soft and melting paste reveals floral, herbal, and slightly woody aromas, enriched by notes of dry hazelnut. It is ideally enjoyed at the end of a meal or on a cheese platter, accompanied by a white wine from Jura such as a Côtes du Jura Chardonnay, whose freshness and minerality highlight the vegetal nuances of the cheese.
