The Langres fermier AOP is an iconic cheese from the Haute-Marne region, produced exclusively by the Remillet family at GAEC des Barraques. Made from raw milk from Alpine Brown cows, it is distinguished by its cylindrical shape that is sunken in the center, creating a characteristic hollow. Its washed rind, orange to reddish-brown, is obtained by rubbing with brine enriched with annatto, a natural vegetable dye. The paste, soft and creamy, offers a sweet and milky flavor, sometimes enhanced by animal notes or slightly bitter undertones depending on the aging. This cheese can be enjoyed plain or enhanced with a splash of Marc de Champagne or Port poured into its hollow, for a unique aromatic experience. It embodies the artisanal know-how and the richness of a preserved terroir, and pairs perfectly with powerful red wines or sparkling whites.
