Le Morillon is a homemade cheese specialty that combines the elegance of Camembert from Normandy AOP with the aromatic richness of the Jura. The cheese is delicately opened to welcome a secret filling made of sautéed morels and yellow wine, the recipe of which has been jealously guarded since time immemorial (or almost). After assembly, the Morillon is aged for a few days to allow the aromas to diffuse into the creamy paste. The result is a powerful, complex cheese with woody, milky, and slightly oxidative notes. It is ideally enjoyed on rustic bread, accompanied by a Jura white wine such as Savagnin or Côtes du Jura. It is also the star ingredient of a wood-fired pizza served near Champagnole, where good products are celebrated. A confidential creation, indulgent and full of character.
