The Lincolnshire Poacher is an iconic cheese from the British terroir, handcrafted at Ulceby Grange Farm by the Jones family. This mountain-style cheddar is made from raw milk from Holstein Friesian cows, raised on the limestone pastures of the Lincolnshire Wolds. Its production combines traditional cheddar techniques with those of Comté. Its natural rind conceals a dense, creamy, straw-yellow paste with complex aromas of hazelnut, broth, dried fruits, and sometimes tropical notes like pineapple. It is ideally enjoyed with a full-bodied red wine or a craft beer.
