The Little Fiancé of the Pyrenees is a farmhouse cheese made from raw goat's milk. Produced in Ariège, in the Occitanie region, it is inspired by Reblochon but has a distinct goat identity. Its uncooked pressed paste is a bright ivory, creamy, and dotted with small holes. Its orange rind, regularly washed, is soft and slightly fuzzy. On the palate, it reveals a rich aromatic palette: floral notes, fresh straw, and hazelnut, carried by a balanced goat intensity.
