Saint Nicolas is an artisanal cheese made from raw sheep's milk, crafted by the monks of the Saint-Nicolas Monastery, located in Hérault. This monastic cheese, also known as Lingot de Saint Nicolas, is distinguished by its small brick shape and its ivory, slightly downy bloomy rind. Its melting and frothy paste reveals a very creamy texture in the mouth. It is flavored with thyme essence, which gives it a unique taste signature. This cheese is ideal for tasting with a white wine from the Pays d’Oc or a red from the Terrasses du Larzac.
