The Tomme of smoked Raclette made with fir wood is an artisanal specialty from the Jura, made from raw cow's milk. After aging in our cellar, each wheel is home-smoked with Jura fir sawdust, giving the cheese a golden-brown rind and unique woody aromas. Its soft and melting paste releases sweet lactic notes in the mouth, enriched by a toasted and fruity touch, evoking campfires and underbrush. This cheese embodies local craftsmanship and the richness of the Jura terroir. It is enjoyed hot in raclette to reveal its full aromatic power, or cold to appreciate its finesse. Perfect with a white wine from the Jura or a light red.
