The Walnut Brown is an artisanal tommet made in Machecoul, south of the Loire, by Fromagerie Beillevaire. This raw cow's milk cheese is regularly washed with walnut husk, giving it its characteristic amber rind and deep nutty aromas. Its creamy yellow paste is soft and delicate. It is ideally enjoyed with fresh walnuts, multigrain bread, or a light red wine.
