All our fresh sausages are made by our teams in Fonsorbes, in the Occitanie region. Since 1922, at Maison Lascours, our specialty remains Toulouse sausage, a must-have. Over the years, we have developed other equally delicious recipes, such as the fine sausage. Prepared from pork meat from the South-West, more specifically from Tarn, the meat comes from Roussaly farms that benefit from the “Lou porc del païs” label. This label guarantees so-called “charcutier” pigs fed with grains such as corn, barley, and wheat, a diet that ensures flavorful, delicate, and tender meat. Butcher's tip: To preserve all the finesse and juiciness of the fine sausage, prefer a gentle and gradual cooking method. Avoid too high flames that could dry out the meat. Start with medium heat, then slightly increase the temperature at the end of cooking to achieve a nice golden color. On the barbecue, prefer indirect cooking before briefly searing it over the coals.
