The Mimolette Vieille is an iconic cheese from the North of France, nicknamed "Boule de Lille" for its spherical shape and orange color. Inspired by Dutch Edam, it is distinguished by its gray, rough rind, perforated by microscopic mites called 'cirons', which promote aging and develop its aromas. Made from pasteurized cow's milk, it is aged for 18 months. Its hard and brittle paste reveals complex flavors of hazelnut, caramel, damp cellar, and toasted notes, with a slightly sweet finish. It is often enjoyed in cubes as an appetizer, grated into savory dishes, or paired with dried fruits and amber beer. This cheese captivates with its aromatic intensity and unique texture. Although it does not have AOP status, the Mimolette Vieille embodies the cheesemaking expertise of the North and a gourmet tradition that spans centuries.
